Baked Tofu with Ginger
Baking Tofu works best when you use a very firm variety of Tofu. Wildwood brand's "Extra Protein Tofu" is a good example of a Tofu that is ideal for baking.
Ingredients:
- 1 lb extra firm Tofu (hint: do not settle for tofu that is simply labeled "extra firm", locate and use actual extra firm tofu for this recipe.)
- 1 Tbsp Corn Starch
- 1 Tbsp Peanut Oil
- 1 Tbsp Soy Sauce
- 1 tsp ground dry Ginger powder
Preparation:
Note: the key to this recipe is to bake the Tofu at a mild temperature for an extended period. Patience is the key to a good result.
Place a well seasoned cast iron pan in the oven and pre heat at 250 degrees.
Place the block of tofu on one of the narrow edges and cut the tofu into 3 large slabs and place on paper towels to dry. As the towels become saturated replace them with fresh dry towels. Repeat until the Tofu seems relatively dry.
Mix the Corn Starch, Oil, Soy Sauce and Ginger powder is a shallow bowl. Use a fork and mix until you have a smooth paste.
Cut each slab of tofu into smaller pieces. A 3 x 4 pattern results in nice size cubes.
Remove the hot pan from the oven and place it somewhere safe and handy. Determine if you need to add a little oil to augment the seasoning.
Place a few cubes of Tofu into the glazing mixture. Gently flip the cubes to coat both sides, and then transfer the tofu to the hot pan. Handle the Tofu carefully so it does not crumble. Repeat the process until all the tofu is coated and placed in the pan.
Put the pan back in the oven and set timer to 40 minutes. Check the tofu occasionally too make sure it does not stick to the pan.
After 40 minutes flip the tofu and continue baking for another 30 minutes.
