Beefy Stew
This recipe makes a hearty stew that is the perfect antidote for a dark and dreary winter day. The recipe relies on two ingredients that have their own recipes. Follow the links to the recipes for home made Seitan and vegetable stock, which you can incorporate into this recipe.
This recipe requires that you coordinate the preparation of three components. The vegetables, the Seitan, and the Gravy. Read through the steps for preparation to get and idea how to manage the timing for each component so the ingredients may be combined at appropriate times.
Ingredients:
- 6 cups of Homemade Vegetable Stock
- 3 cups of Potato chopped into 1/2" to 3/4" cubes
- 6 medium size Carrots chopped into segments similar in volume to the potatoes
- 1 medium size Onion chopped into large bitesize pieces
- 1 Teaspoon of Rosemary seeds freshly ground
- 1/2 Teaspoon of White Pepper freshly ground
Beefy Ingredients:
- Peanut Oil to cover bottom of frying pan.
- 1 medium size Onion chopped into small pieces
- 14 ounces of Seitan chopped into large bite size chunks
Brown Gravy Ingredients:
- 3 Tablespoons of Butter
- 1 Tablespoon of Soy Sauce
- 1 cup of Flour
- Soup stock borrowed from the main stew pot
Preparation:
Place the vegetable stock in a large pot and heat it to a light boil.
Add the Potatoes, Carrots, Onion, Rosemary, and Pepper to the stock. When the liquid begins to boil adjust the heat to maintain a gentle simmer. After 10 minutes, begin frequently checking the vegetables to ensure that they do not become overcooked.
Heat a fry pan to sear the Seitan and Onions. Add some Peanut Oil when the pan is hot.
Add the Onions to the fry pan and cook them until they have browned nicely.
Push the Onions to the sides of the pan so they continue to brown. Add a little extra oil to the center of the pan if necessary.
Place the pieces of Seitan in the pan and sear them on two sides. Move the cooked pieces to the sides and continue to add the remaining pieces of Seitan until all has been seared with a crispy brown finish.
When the vegetables in the stew pot have become tender add the seared Seitan and browned Onions to the stew.
Remove some liquid from the stew and place it in a small mixing bowl. Whisk the flour into the stock. Mix thoroughly so there are no lumps.
Heat a small sauce pan.
Melt the Butter in the sauce pan, until it just begins to burn. Add the Soy Sauce.
Add the slurry of flour to the sauce pan. Stir while the mixture rises in heat.
When the gravy has thickened add it to the stew pot and stir it in.
Serve the stew while it is hot.
