Cajun Red Beans
This recipe makes 6 servings of beans.
Ingredients:
- Peanut Oil to cover bottom of frying pan
- 1 large Sweet Onion chopped fine
- 1 tablespoon freshly minced Garlic
- 3 15oz cans of Red Kidney Beans drained and rinsed
- 2 teaspoons salt
Spices:
- 1/2 teaspoon Black Peppercorns freshly ground
- 1/2 teaspoon White Peppercorns freshly ground
- 1/2 teaspoon Coriander Seed freshly ground
- 1/2 teaspoon Cumin Seed freshly ground
- 3 tablespoons mild red pepper powder (freshly ground and or Paprika)
Preparation:
Heat Peanut Oil in large frying pan
Fry the Onions. When the Onions soften add the Garlic. Fry until edges of Onions begin to brown.
Add the spices and mix quickly
Add the Red Kidney Beans and Salt
Bring the mixture up to heat and simmer until the moisture begins to reduce and beans become "sticky"
Serve over freshly steamed rice.
