Cheese Cake with Blueberries
This recipe makes two cheese cakes with fruit topping.
Ingredients:
2 8oz (by weight)Packages of Cream Cheese
1 14oz can of Sweetened Condensed Milk
1 tablespoon of Vanilla Extract
1/2 cup of fresh Lemon Juice
2 Graham Cracker Pie Crusts
1 21oz Can of Comstock Blueberry Pie Filling
Preparation:
Let the blocks of Cream Cheese rise to room temperature.
Mix the Cream Cheese, Condensed Milk, and Vanilla Extract until it is soft, smooth and airy.
Add the Lemon Juice to the cheese mixture and mix thoroughly.
Transfer the cheese mixture into the pie crusts.
Place the cheese cakes in the fridge, or freezer, so the cheese will become firm.
When ready to serve, top the cheesecakes with the fruit filling
