Dal Adas
Red lentils in a Persian style.
Serve over rice.
This recipe makes 8 large servings.
Ingredients:
- enough Peanut Oil to cover bottom of 2 quart saucepan
- 2 cups of chopped onion
- 1 teaspoon of freshly minced Garlic
- 2 cups of water ( add up to 1/2 cup extra if water cooks off )
- 2-1/2 cups of potatoes chopped into small cubes
- 2 teaspoons of salt
- 1 cup of red lentils
- 1/2 cup finely chopped raisins
- 1 13oz bag of frozen Sweet Peas
Spices
- 1/2 teaspoon of Black Pepper seeds ground fresh
- 1/2 teaspoon of White Pepper seeds ground fresh
- 1/2 teaspoon of Coriander seeds ground fresh
- 1 pod of Green Cardamom seeds ground fresh
- 1/2 teaspoon of Cinnamon powder ground fresh
- 1 teaspoon of ground Ginger
- 1/2 teaspoon of Turmeric powder
- 1/4 teaspoon of Cayenne powder
- 4 or 5 fresh ground dried New Mexican sweet mild ristra peppers
or 2 tablespoons of Sweet Paprika
Finishing ingredients
- 1 tablespoon of Olive Oil
- 1 tablespoon of Honey
- 3 tablespoons of Pomegranate Molasses
Preparation:
Heat the Oil in a 2 quart saucepan.
Sauté the Onions until they begin to soften.
Add the Garlic to the Onions and continue cooking until an aroma rises.
Add the Potatoes and Salt and stir until the potatoes are coated with oil.
Add 1-1/2 cups of the water and cook the potatoes for 10 minutes
Add the Lentils, Spices, and 1/2 cup of water. Stir until the contents of the saucepan are well mixed.
While continuing with the following steps you can add portions of the extra 1/2 cup of water, if required, to keep the contents moist, but withhold any water that you can so the finished mixture ends up with a thick consistency.
Bring the contents to a rolling boil.
Lower the heat and cover the saucepan.
Let the contents simmer for about 10 minutes while stirring occasionally to keep the bottom from burning.
Add the Raisins and stir them into the mixture.
Add the frozen Peas when the Potatoes are cooked and have softened. Continue simmering while while stirring frequently, for about 10 more minutes.
Add the finishing ingredients and mix them in thoroughly.
Remove the saucepan from the heat and let the contents settle for 5 minutes before serving.
