Olive Tapenade:
A traditional olive spread or Hors d'Ĺ“uvre from Provence France
This recipe makes a large quantity suitable for a party.
Ingredients:
- 1 medium Onion chopped finely
- 1 teaspoon of Black Pepper
- Peanut Oil for frying onions
- 1/4 cup Pine Nuts
- 1-1/2 cup of chopped Green Olives
- 1/2 cup of Kalamata Olives chopped finely
- 1/4 cup of minced Sun Dried Tomatoes
- 1/4 cup finely chopped Fresh Basil
- 1/8 cup of freshly minced Garlic
- 1 tablespoon of minced Capers
- 1 cup (or more) of Olive Oil
Preparation:
Heat the Oil and Pepper in a pan
Fry the Onion until the pieces are well browned and candied. Set the onions in a large mixing bowl.
Lightly toast the Pine Nuts in the fry pan used for the onions. Stir frequently and take care not to burn the nuts. Remove from heat as soon as the nuts begin to brown.
Add the remaining ingredients to the mixing bowl and mix thoroughly
Let the mixture sit for a while so that the flavor may blend
Serve and eat with crackers or bread slices or store in refrigerator until ready
