Pad Thai Tofu Simple Style:
Ingredients:
- 1 14oz pack of size large Rice Noodles
- Peanut Oil to cover bottom of large pan
- 2 cups Carrots julienned
- 2 cups Scallions chopped
- 1 lb Tofu chopped into small cubes
Sauce ingredients:
- 2 tablespoons Tamarind Paste
- 1 tablespoon Apple Cider Vinegar
- 1 tablespoon Soy Sauce
- 2 tablespoons of Peanut Oil
- 4 tablespoons Brown Sugar
- 2 tablespoons Honey
- 4 tablespoons Natural Peanut Butter
- 1 cup Dry Roasted or Raw Peanuts ground into bits
- 1 tablespoon chopped Fresh Basil
- 1 tablespoon Salt
Spices:
- 1/2 teaspoon White Pepper fresh ground
- 1/2 teaspoon Coriander fresh ground
- 3 large Dried Chile fresh ground
- 2 teaspoons dry Ginger Powder
- 1/8 teaspoons Cayenne hot pepper Powder
Preparation:
Soak the Rice Noodles in warm water for approximately 45 minutes.
Mix the sauce ingredients and spices in a small mixing bowl. Taste and make adjustments as desired. Set the Sauce aside to settle and blend.
Heat some Peanut Oil in a pan large enough to hold all the combined ingredients.
Fry the cubes of Tofu for a few minutes.
Add the Carrots to the Tofu and continue frying for a few minutes. Stir frequently.
Add the Scallions to the fry and continue until the aroma of onion rises.
Lower the heat and add the Sauce and mix it in. Be careful not to burn the bottom of the pan.
Drain the Noodles. Add portions of the Noodles to the pan while stirring so that the ingredients are evenly distributed and the Noodles are coated in sauce.
Turn the heat to Low and cover the pan so that the noodles are warmed with the steam. Take care not to burn the pan ans the mixture will dry rapidly as the Noodles absorb the moisture.
Serve as quickly as possible.
