Tortellini with Walnuts and Cranberries
This recipe results in a mildly flavored pasta salad that features the wholesome taste of the pasta and filling. The fixings and dressing accent the flavor but nothing is meant to seem prominent or overpowering.
Note that the pasta product used is labeled as "Tortellini" but could be more accurately described as a Cappelletti pasta.
Ingredients:
Tortellini:
- 36 ounce package of Kroger frozen Cheese Tortellini
- 1 teaspoon of Salt
- large pot of boiling water
Fixings:
- 3/4 cup chopped Walnuts
- 1/2 cup dried Cranberries
- 3 tablespoons of minced fresh Basil
- 1/2 cup of finely grated Pecorino Romano cheese
- 1/2 cup of bread crumbs
Dressing:
- 1/4 cup Olive Oil
- 1/4 cup Honey
- 1/4 Apple Cider Vinegar
- 5 Cloves minced fresh roasted garlic
- 1 teaspoon Salt
- 1/4 teaspoon freshly ground Black Pepper
- 1 freshly ground Clove
Preparation:
Heat a large pot of water to bring it to a boil.
Combine the Dressing ingredients in a small sauce pan and heat it enough to distribute the honey and blend the flavors.
Add 1 teaspoon of Salt when the water is boiling.
Cook the Tortellini as directed on the product package. Take care to not overcook it.
Drain the hot water from the Tortellini and rinse with cool water. Place the pasta in a large mixing bowl.
Pour the Dressing into the mixing bowl and gently stir the mixture to coat the pasta.
Add the Fixings to the mixing bowl and gently stir to distribute all the ingredients.
Let the mixture sit a while so the flavors may blend before serving.Refrigerate the dish if storing it for later service.
Serve chilled or near room temperature depending on preference.
