Aztec Potatoes
Ingredients:

5 pounds of Youkon Gold Potatoes. peeled and chopped into 1/2" cubes.
- Peanut Oil to cover bottom of baking pan.
Initial Spices and Seasonings:
- 1 Tablespoon of Salt
- 1 Tablespoon of Onion Powder
- 1 Tablespoon of Garlic Powder
- Spray Mist of Olive Oil
Final Spices and Seasonings:
- 1 Tablespoon of Onion Powder
- 2 Tablespoons of Chili Rojo or Paprika powder
- 1 Teaspoon of freshly ground Black Pepper
Preparation:
Preheat oven to 450*F.
Warm the baking pan and then cover the bottom with a generous amount of
Peanut Oil.
Place half of the chopped Potatoes in the pan and cover them with the intial
dry spices and seasonings. Add the rest of the potatoes and stir gently to
mix the seasoning evenly.
Spray a mist of Olive Oil over the Potatoes.
Cover the baking pan with foil, and place it in the 450*F oven.
Roast the Potatoes for 30 minutes.
Remove the baking pan and discard the foil covering. Add the remaining
spices and stir gently to mix the seasoning evenly.
Place the oncovered baking pan back in the 450*F oven for 10 minutes.
Remove the baking pan and stir the ingredients.
Switch the oven to Broil.
Place the baking pan under the broiler for 5 minutes.
Remove the baking and stir every 5 minutes until you are satisfied with the
browning. 2 or 3 cycles usually more than enough.
Serve immediately, or set aside for later use.
