Dal Adas
Red lentils in a Persian style.
Serve over rice.
This recipe makes 8 large servings.

Preparation:
Heat the Oil in a 2 quart saucepan.
Sauté the Onions until they begin to soften.
Add the Garlic to the Onions and continue cooking until an aroma rises.
Add the Potatoes and Salt and stir until the potatoes are coated with
oil.
Add 1-1/2 cups of the water and cook the potatoes for 10 minutes
Add the Lentils, Spices, and 1/2 cup of water. Stir until the contents of
the saucepan are well mixed.
While continuing with the following steps you can add portions of the extra
1/2 cup of water, if required, to keep the contents moist, but withhold any
water that you can so the finished mixture ends up with a thick
consistency.
Bring the contents to a rolling boil.
Lower the heat and cover the saucepan.
Let the contents simmer for about 10 minutes while stirring occasionally to
keep the bottom from burning.
Add the Raisins and stir them into the mixture.
Add the frozen Peas when the Potatoes are cooked and have softened. Continue
simmering while while stirring frequently, for about 10 more minutes.
Add the finishing ingredients and mix them in thoroughly.
Remove the saucepan from the heat and let the contents settle for 5 minutes
before serving.
