Horiatiki Greek Salad
( pronounced Hoary - ah -tiki )
This is a traditional "village style" Greek Salad, which is characterized by
an absence of leafy greens. This salad is not meant to be tossed or mixed in
a bowl, but rather served on a platter as an assortment of large chunks of
bite sized fresh ingredients. The recipe makes 2 meal size servings.
Ingredients:
- 2 medium sized Potatoes
- 1 Cucumber
- 1 large Beefsteak Tomato
- 1/2 lb Feta Cheese cut into small cubes
- A portion of 1 small fresh Green or Red Pepper
- A portion of 1 medium Shallot or small Onion
- 6 Pepperoncini Peppers
- 12 Kalamata Olives
Dressing ingredients:
- 3 tablespoons Olive Oil
- 1 tablespoon chopped fresh Oregano
- 1 teaspoon salt
- 1 tablespoons Apple Cider Vinegar
Preparation:
"Bake" the Potatoes in a microwave oven until they are cooked but not
softened by overcooking. Chop the potatoes into large bite size cubes, and
place the Potatoes at the bottom of a serving dish.
Peel the Cucumber. Cut it into quarters along the length, and chop the
quarters into chunks. Place the Cucumber chunks on top of the Potatoes.
Chop the Tomato into large chunks and place them in the salad.
Chop the Feta Cheese into large chunks and place them in the salad.
Slice the fresh Pepper into thin rings and place them in the salad.
Apportion the Peppers to taste.
Slice and separate the Shallot or Onion into rings. Lay the rings over the
salad. Apportion the Peppers to taste.
Add the Pepperoncini Peppers and Kalamata Olives to the salad.
Pour the dressing over the salad.
Serve the salad as an entree or with other traditional Mediterranean sides
and dishes.
