Lemon Frosting

Note: The flavor is best when the frosting is prepared well ahead of serving time. Letting the lemon flavor blend with the butter and sugar before spreading or serving is an important step in this recipe.

Ingredients:

3/4 of a pound of Butter. (Usually 3 sticks, or 1-1/2 cups.)
2 pounds of Powdered Confectionery Sugar (approximately 8 cups)
1 teaspoon of Vanilla extract
2 heaping Tablespoons of finely chopped fresh Lemon Zest sourced from 3 large Lemons
1/2 cup of fresh squeezed lemon Juice sourced from 3 large Lemons

Preparation:

Place the Butter and Lemon Juice in a 4 Quart Pyrex mixing bowl.

Mix the Butter and Lemon Juice thoroughly.

Add the Lemon Zest and Vanilla. Mix it in evenly.

Add some of the Powdered Sugar and begin mixing. Continue adding sugar until it is all incorporated and the mixture takes the form of frosting.

Let the mixture blend in a refrigerator for a minimum of several hours before spreading onto a cake.
